Bubble and Squeak

Ingredients

  • 6 tablespoons of unsalted butter
  • ½ a cup of finely chopped sweet onion
  • 1 pound of mashed potatoes
  • 1 cup of finely chopped leftover cooked vegetables
  • Seasoning to taste

Method

In a large frying pan, melt the butter over a medium heat making sure it doesn't burn. Add the chopped onions and gently fry them for about 5 minutes. Turn up the heat to medium-high and add the mashed potatoes and finely-chopped vegetables. Fry for at least 10 minutes, turning everything continuously to get everything properly reheated and coated in butter. The aim is to slightly brown the edges of the vegetables. Pressing down with the turner before flipping sometimes helps. When the mixture is properly heated right the way through, press it all down into base of the pan with a spatula. Let it cook for about a minute or so, then flip the whole thing and cook for another minute. You may need to repeat the flipping and heating a couple of times to get the desired effect. This is a great starter with a fried egg, but it also makes a good side dish with leftover roasted meat and gravy.
