The family recipes of Deborah and Simon Jessey



  • 1 cup of Cheddar cheese
  • 1 cup of Mozzarella cheese
  • 1 cup of finely chopped pre-cooked ham or bacon
  • 2 eggs or the equivalent in egg whites


Preheat the oven to 375°F. Lightly grease 9 muffin-tin cups. In a medium bowl, mix all the cheese and the eggs until well combined. Stir in the chopped bacon or ham. Divide the mixture into the muffin tin cups and bake for 16-20 minutes until the cheese has just started to brown. Take out of the oven and let stand for a couple of minutes before serving.
