Sausage and Tomato Casserole


  • 1lb mild pork sausage meat
  • 4 large potatoes
  • 1 can of diced tomatoes
  • 1 teaspoon of sugar
  • 1 handful of dried onions
  • 1 tablespoon of dried mixed herbs, as desired
  • 2 tablespoons of extra light olive oil
  • Seasoning


Peel, wash and slice the potatoes. Each slice should be about half an inch thick. Place in a saucepan, cover with water and add a teaspoon of salt. Bring to a roiling boil and then allow to simmer on medium for about 8 minutes. Drain well and set them aside.

Squish the sausage meat into a casserole dish, mixing in half the dried onions, half the herbs and a little seasoning. Sprinkle the remaining onions and herbs on top of the sausage meat and cover with the tomatoes straight from the can. Sprinkle the sugar over the tomatoes and add a little seasoning. Layer the potatoes on top, brushing each layer with the olive oil and adding a little seasoning.

Preheat the oven to 450°F (230°C). Bake for 40 to 50 minutes, or until the potatoes are golden brown on top.
